Let’s talk about scones! We have pumpkin spice, coconut lime and cranberry lemon, oh yes..


Can I just say I enjoy a good scone. Here are some of my fav scones and their recipes!

The Cranberry Lemon:

WHAT YOULL NEED:

– 3/4 cup plain yogurt

– 1 lrg egg

– 2 3/4 cup flour

– 4 tbs baking powder

– 1/2 tsp baking soda

– 1/2 tsp salt

– 1/2 cup margarine

– 1 cup cranberries (fresh, frozen or dried)

– 1/2 cup sugar

– rind of 1 lemon

1. Preheat oven to 375. In a small bowl beat together the yogurt and egg then set aside.

2. In a large bowl mix together flour, baking powder, baking soda and salt.

3. Cut the margarine until the mixture begins to resemble peas. Mix in cranberries, sugar and lemon rind.

4. Stir mixture until soft dough.

5. Using hands form a dough ball and place on a floured surface. Pat out to 1″ thick. Use a round cookie cutter and place on cookie sheet.

6. Bake for 15-20 minutes


Mini Coconut Lime Scones:

WHAT YOULL NEED:

– 3/4 cup plain yogurt

– 1 lrg egg

– 2 3/4 cup flour

– 4 tbs baking powder

– 1/2 tsp baking soda

– 1/2 tsp salt

– 1/2 cup margarine

– 1 cup coconut

– 1/2 cup sugar

– rind of 1 lime

1. Preheat oven to 375. In a small bowl beat together the yogurt and egg then set aside.

2. In a large bowl mix together flour, baking powder, baking soda and salt.

3. Cut the margarine until the mixture begins to resemble peas. Mix in coconut, sugar and lime rind.

4. Stir mixture until soft dough.

5. Using hands form a dough ball and place on a floured surface. Divide into two and form two separate 1″ balls. cut into even triangles

6. Bake for 15-20 minutes


Pumpkin Scones:

WHAT YOULL NEED:

– 2 cups flour

– 1/3 cup packed brown sugar

– 2 or 3 tsp cinnamon

– 1 tsp baking powder

– 3/4 tsp cloves

– 1 tsp ginger

– 1 tsp nutmeg

– 1/2 tsp baking soda

– 1/4 tsp salt

– 1/2 cup margarine

– 1 cup pumpkin puree

– 3 tbs milk

– 1 lrg egg

– 2 tsp vanilla

1. Preheat oven to 400. In a small bowl combine the pumpkin, milk, egg and vanilla. Set aside

2. In a larger bowl combine the flour, sugar, baking powder, baking soda, spices and salt.

3. Cut in the margarine until it forms small peas.

4. Once the small peas have been created add the wet mixture back and combine until a soft dough forms.

5. On a floured surface fold the mixture out and create a ball with your hands. flatten and pat out to 1″ thick. Cut into 1/8s and place on a baking sheet. Bake for 8-10 minutes.
